Physicochemical and bioactive characterization of Apis mellifera honey produced in different agroecological zones of the Amazonas region, Peru

Abstract

The physicochemical properties of 20 honey samples from Apis mellifera collected in the Amazonas region of Peru were evaluated. Parameters such as pH, titratable acidity, total soluble solids, water activity, moisture content, reducing sugars, viscosity, electrical conductivity, hydroxymethylfurfural, color, flavonoids, total phenols, and antioxidant activity were analyzed. The results showed pH ranges between 3.63 and 4.98 and titratable acidity between 12 and 25 meq/kg. Total soluble solids ranged from 73.3 to 79.3 °Brix, while water activity ranged from 0.58 to 0.67. Moisture content ranged from 16.91 % to 22.84 %, and reducing sugars ranged from 52.46 to 77.34 g/100 g. Viscosity ranged from 2.66 to 25.63 Pa·s, and electrical conductivity ranged from 33.17 to 80.23 mS/cm. The hydroxymethylfurfural content ranged from 30.84 to 37.81 mg/kg, and the color ranged from 1.29 to 158.14 mm Pfund. Differences were also observed in the total flavonoid and phenolic contents among the samples. Antioxidant activity, assessed using the DPPH assay, ranged from 84.49 % to 91.49 %. Overall, the results demonstrated high variability in the physicochemical properties of honey produced in the Amazonas region.
