Abstract

The objective of this study was to evaluate the effect of cinnamon essential oil microcapsules on the physicochemical, bioactive, rheological, textural, and sensory properties of dark chocolate. To this end, dark chocolates were prepared by incorporating cinnamon essential oil microcapsules, using maltodextrin and gum arabic as coating materials, at different concentrations and incorporation levels. The following parameters were determined: pH, titratable acidity, whiteness index, antioxidant capacity, total phenolic content, Casson rheological parameters, hardness, particle size, and sensory acceptance. The data were analyzed using ANOVA and Tukey’s test, with a significance level of p < 0.05. The results showed that the incorporation of microcapsules significantly affected pH, titratable acidity, whiteness index, total phenols, yield stress, viscosity, hardness, and particle size. In contrast, antioxidant capacity did not show significant differences among the treatments, while overall sensory acceptance remained unchanged. Consequently, it is concluded that cinnamon essential oil microcapsules modified the physicochemical, bioactive, and technological properties of dark chocolate without reducing its overall sensory acceptance.
